Region

Côtes de Provence AOC is the largest appellation of the Provence wine region in south-eastern France. It covers roughly 20,000 hectares (50,000 acres) of vineyards, which produce the vast majority of Provence's rosé wine. This appellation includes most of the viticulture in the Var department – essentially the eastern half of the Provence wine region – apart from 2250 hectares (5500 acres) due north of Toulon which is set aside for the Côteaux Varois en Provence appellation.Although it also covers red and white wine, about 80 percent of Côtes de Provence's output is rosé. This is made predominantly from Grenache, Syrah, Mourvèdre, Cinsaut grape varieties plus the quintessentially Provencal red grape Tibouren.

Sémillon is one of the wine world's unsung heroes. The gold-skinned grape produces France's most famous and revered sweet wines, notably Sauternes, and some of the greatest dry white wines of Australia (specifically those of the Hunter Valley). And yet, few Sémillons between these two extremes attract much attention.The thick-skinned grape is characterized by its autumnal colors in the vineyard. Sémillon is vigorous and easy to cultivate, and buds later (but ripens earlier) than its most common blending partner, Sauvignon Blanc. Although the fruit is usually bright golden-green, it is not uncommon to find pink- and copper-colored berries around harvest time. Certainly, when the grapes are affected by the noble rot, Botrytis cinerea, they take on darker hues and gnarled textures; viticulturists view the sight with anticipation and excitement.

Food Pairing

Foie gras is a perfect pairing. Can also be paired with roasted chicken & veal that are either spicy, or sweet.

Tasting Notes

A juicy palate of fleshy, white fruit (such as Asian pear) only underscores the striking aromas on this elegant Bordeaux Blanc. Generous tropical notes of kiwi & lychee mingle with honeyed floral tones. A fine, fuller texture aligns with precise acidity.
